Finally cooked: the vegan lentil Bolognese.


I think this recipe falls under the “vegan classics” and I made a lentil Bolognese for the first time a few days ago. Somehow I couldn’t really imagine lentils as vegan Bolognese. I was wrong. This pasta is so delicious and, contrary to my expectations, not a bit dry either. The yeast flakes particularly stand out in terms of taste. Also a novelty in our kitchen. I don’t understand why I haven’t cooked with it before. What is also great about this recipe: it takes little preparation and is sure to be enjoyed by the whole family. Yes, even our rocket really enjoyed eating it.

The vegan lentil Bolognese is certainly one of the classics of plant-based cuisine – and finally I cooked it too.

For about four servings you need:

  • 800g canned tomatoes
  • 1 onion
  • 2 handfuls of mushrooms (brown)
  • 3-4 tbsp tomato paste
  • 3 tbsp yeast flakes
  • 2 tbsp vegan miso paste
  • 2 teaspoons agave syrup
  • Herbs (for example oregano)
  • 1 can of cooked lentils
  • 250g spelled spaghetti
  • Salt for cooking and seasoning
  • 200ml water

First, the mushrooms are cleaned and chopped very finely. Remove the skin from the onion and also chop it into very small pieces. For the canned tomatoes, pour off the liquid and collect in a bowl. Then heat the tomato juice in a medium saucepan. Add the onions and mushrooms to the saucepan and let simmer briefly.

Now stir in the tomato paste, agave syrup, miso paste and yeast flakes in 200ml water. Add to the sauce. Now cut the canned tomatoes into small pieces and add them to the sauce with the lentils (drain beforehand). Let everything simmer until the sauce thickens. Season with salt and oregano (with other herbs if desired).

Cook the spaghetti in salted water according to the instructions on the packet. Drain and serve on a plate with the lentil Bolognese. Add a few sprigs of thyme for the look. Bon Appetit!
